Why Miami-Dade fines mount so fast

Miami-Dade enforces FOG rules with software, not clipboards. Every night at 2 a.m. the county’s portal cross-checks pump-out manifests against each kitchen’s permit. When a log shows 91 days without a service ticket or a grease trap that topped 25 percent last inspection the script auto issues a $250 administrative fee and queues a violation letter before an inspector even starts the truck.

A Wynwood burger joint learned that routine firsthand: a five-gallon bucket flipped in the alley on Tuesday, security-pole cameras caught the slick, and a $570 ticket printed by Friday. The kicker? Second offences jump to $1 150 under the new schedule passed this May. In Miami-Dade, staying current isn’t a best practice; it’s a countdown timer.
