Grease Log Requirement for Miami-Dade, FL
Keep signed manifests three full years, either on paper or instantly viewable in a digital portal.
A Doral taquería lost its binder in a flood, but PDF logs from our dashboard satisfied the inspector and dodged a $250 fee. Grease Connections auto-stores every ticket the moment the driver taps “complete.”

How Miami-Dade Enforces it
Section 24-42.6 of the County Code says inspectors may ask for three full years of manifests “on site and immediately viewable.” If a log is missing—or hidden behind a login that slows the audit—inspectors issue a $250 administrative charge and schedule a return visit within 72 hours.
